Make the Most of Your Mojito

There is nothing quite like a mojito.

This is a great way to use up leftover limes, or even the mint that's growing like crazy in your garden. All of these ideas are so quick and simple! I make mojitos all the time, using mint from the garden, along with the other ingredients that I more often than not have lying around the kitchen.
For the cake:
250g self-raising flour
250g butter
150g demerara sugar
100g caster sugar
A couple drops of milk
Zest of 2 limes (keep the lime for later!)
4 eggs
1 vanilla pod/vanilla extract
Heat your oven to 160 fan. Grease or line a suitable baking tray.
Cream together the butter and sugar until completely combined. Next add the eggs, one at a time, followed by the flour and the rest of your ingredients.
Bake for 30 minutes, leave to cool, voila!

Frosting:
150g cream cheese
40g butter
80g icing sugar
Zest and juice of half a lime
2 tbsp rum
Small bunch of chopped mint leaves
Cream butter until light and fluffy. Add cream cheese and beat again until combined. Next combine rest of ingredients.
Once cake has cooled, cut into small squares, trimming the edges and add a small dollop of frosting on top. The recipe makes enough for around 16 squares.
Garnish with mint leaf.

With your leftover lime from earlier, chop into small pieces, along with any mint, and pop into an ice mould. The great thing about this is you can add any other leftover fruit to flavour your water whenever you want.

Finally, the Pièce De Résistance. A good old mojito, with a little twist. You will need:
Lime
Rasperries (optional)
Brown sugar
Sparkling water
A good handful of mint leaves
White or dark rum
Ice, and lots of it
I like to start by just covering the bottom of the glass with sugar, before adding 1 measure of rum. I then add 8-10 mint leaves, along with the raspberries, some lime juice and wedges, and give them a good muddle. Next I fill the glass with loads of ice and sparkling water to the top. Garnish with some pretty mint leaves and a straw.
So those are just a few ideas to spruce up your mint and lime.
