It's Taco Time, Lettuce Taco Time!

Everyone loves tacos.

I decided to try replacing taco shells with crispy lettuce leafs.

Now I have an excuse to eat them every day!

You can put these together in 10 minutes, with either chicken, beef or pork mince. I used chicken mince here and paired it with feta, but if you're going to use beef or pork I would go for a cheddar. If you're vegan or vegetarian, you could use beans in place of the meat.

Tacos For Two:

Romaine or Iceberg lettuce (enough to satisfy your apetites!)

A good sprinkling of feta or cheddar

3 tomatoes

1 large avacado

1 lime

Bunch of coriander

Mince meat of choice (not the mince pie kind..obviously) Chili flakes

Cumin seeds, crushed

Olive oil

Start by chopping the tomatoes into small cubes along with about 10 coriander leaves. Season and mix.

Slice avocado, season, and add lime to keep fresh.

Crumble feta, or grate cheddar.

Add a good glug of olive oil into the pan and add mince meat. Season with chili flakes, salt, pepper and cumin. Stir until cooked through.

I just pile it all up on a plate, and then top with cheese.

Add fresh chili for a kick.
