Light Lunch

Now that the sun is back, I want to eat light.

Today's lunch was a salad made up of leftovers from a birthday celebration the night before. I always have cucumbers in the fridge, so I decided to peel it into ribbons and dress it with a little chili, white wine vinegar, salt and pepper. I sat that on the side to rest for a while and chopped up my leftovers of asparagus, potatoes, guacamole, tomatoes and smoked salmon. 5 minutes later, and your lunch is ready!

For a little extra energy I had some fruit to finish, nectarines are especially good at the moment!
