One Pan Spinach Egg Bake

This is something that I make when I feel like a warm, comforting lunch, and haven't got much left in the fridge.

You will need:

Olive oil

Spinach

Cherry tomatoes

1 egg

Seasoning

Saffron

Start by cooking your lightly cooking the spinach in a little bit of olive oil, season as it starts to wilt. Cut cherry tomatoes in half and place around spinach, leaving a hole in the middle to crack the egg into. Season egg and add a little bit of saffron.

Bake for 8 minutes at 180 degrees until whites are cooked.

Serve in pan and remember the handle will be unbelievably hot! I fall for this every single time.

Not only does this dish taste great, it also leaves you with just one pan to clean :)
